Polenta

Ingredients

  • 3 cups water
  • 1 cup yellow cornmeal
  • ½ tsp. coarse kosher salt
  • ¼ tsp. black pepper
  • 1 cup shredded cheese (parmesan or cheddar)

Preparation:

  1. Combine ingredients in 3-Qt./3 L Casserole.
  2. Stack and microwave on high power 15–20 minutes. Whisk to combine.

Chicken in a stew

Ingredients

  • 2 chicken breasts, cut in half
  • 1 tsp. Adobo with pepper seasoning
  • ¼ tsp. ground annatto
  • 2 tbsp. tomato sauce
  • 1 tbsp. sofrito

Preparation:

  1. Season chicken breasts with Adobo and annatto. Place in 1¾-Qt./1.75 L Casserole.
  2. Pour sauce and sofrito over chicken.
  3. Stack and microwave on high power 15–20 minutes. Let rest 5 minutes.

Sausage & peppers

Ingredients

  • 1 onion, peeled
  • 1 green bell pepper, cored
  • 4 Italian sausages, sliced ¼ʺ/.6 cm thick

Preparation:

  1. Thinly slice onion and green pepper.
  2. Place sliced sausages into 1¾-Qt./1.75 L Casserole and cover with sliced onion and pepper.
  3. Stack and microwave on high power 15–20 minutes. Let rest 5 minutes.

Sloppy Joe’s

Cooking times listed in recipes are based on stacking, preparing three dishes at once. If you’re preparing a single dish on its own, cook 8-10 minutes on power level high

Ingredients

  • 1 lb./455 g ground beef, turkey or chicken
  • 8-oz./225 g can tomato sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. yellow mustard
  • ¼ cup ketchup
  • 1 tsp. coarse kosher salt
  • ½ tbsp. chili powder
  • 6 buns

Preparation:

  1. Add meat to Colander and place Colander over 1¾-Qt./1.75 L Casserole. Cover and microwave on high power 5–6 minutes, stirring halfway through, until meat is cooked through.
  2. In a medium bowl, stir together remaining ingredients. Add meat to mixing bowl and stir to coat meat.
  3. Drain and wipe out Casserole, then add meat mixture back into the Casserole.
  4. Stack and microwave on high power 15–20 minutes. Serve warm on desired bun.

  • 1½ cups water

Preparation:

  2. Stack and microwave on high power 15–20 minutes. Let rest 5 minutes and fluff with fork.

Ingredients

  • 1 cup grits
  • 4 cups water

Preparation:

  1. Stir together ingredients in 3-Qt./3 L Casserole.
  2. Stack and microwave on high power 15–20 minutes. Let rest 5 minutes and stir. Will continue to thicken as it rests.

Stuffed upside down peppers

Cooking times listed in recipes are based on stacking, preparing three dishes at once. If you’re preparing a single dish on its own, cook 8-10 minutes on power level high

Ingredients

  • 1 lb./455 g ground beef
  • 1 onion, chopped using Chop ’N Prep Chef
  • 5-oz./425 g can diced tomatoes
  • 1 cup quick cooking rice
  • 10-oz./285 g can enchilada sauce
  • 1 large green bell pepper, cored and quartered
  • ½ cup shredded cheese

Preparation:

  1. Add beef and onion to Colander. Place Colander in 1¾-Qt./1.75 L Casserole. Cover and microwave on high power 5–6 minutes, stirring halfway through, or until meat has cooked through.
  2. Drain and wipe clean 1¾-Qt./1.75 L Casserole. Transfer meat to Casserole and add tomatoes, rice and enchilada sauce. Stir to combine.
  3. Place peppers, cut side down, on top of meat mixture.
  4. Stack and microwave on high power 15–20 minutes. Let rest for 5 minutes.
  5. Spoon meat mixture over each pepper quarter and top with cheese.

Pumpkin Zucchini Bread

A kitchen can’t be ready for the fall season without the warming scent of pumpkin spice—but this isn’t your typical pumpkin spice recipe. Try out our zucchini bread using the Grate Master™ Shredder and let us know what you think. And also how your kitchen smells once this delicious masterpiece is complete!

Ingredients

  • 1½ cups sugar
  • ½ cup vegetable oil
  • 2 eggs, beaten
  • ½ lb./225 g canned pumpkin
  • 1/3 cup water
  • ¾ tsp. vanilla extract
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. table salt
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1¾ cups flour
  • 1 medium zucchini
  • 1 tbsp. softened butter for greasing pan

Instructions

  1. Preheat oven to 350° F/175° C.
  2. In a medium Thatsa bowl, whisk together sugar, oil, eggs, pumpkin, water and vanilla. Set aside.
  3. In another medium Thatsa bowl, whisk together baking powder, baking soda, salt, spices and flour.
  4. Whisk wet and dry ingredients together until well combined.
  5. Assemble Grate Master™ Shredder with fine cone. Place zucchini in hopper and turn handle to shred, using plunger to push last of zucchini, when necessary.
  6. Fold 1–2 cups shredded zucchini into batter.
  7. Pour batter into greased UltraPro 2-Qt./2 L Square Pan. Bake 30–40 minutes or until knife comes out clean.
